This is a Mukimono knife by Masayoshi. Mukimono knives are single-bevel Japanese knives suited to fine work such as katsuramuki (rotary peeling) and decorative cuts. The combination of a water buffalo horn handle and mirror-finished blade is beautiful, making this knife a pleasure to look at as well as to use.

The blade is single-bevel Hagane (carbon steel) with a sharp cutting edge. The mirror-finished portion provides good food release and a refined appearance.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.

Blade oil has been applied for storage, so the mirror-finished area may appear cloudy at first. Lightly washing with dish soap will restore its original sheen.

Please note that the mirror or semi-mirror finish is often applied only to part of the blade rather than the entire edge. Please refer to the photos for the exact condition. As this is hand-finished, there may be fine scratches remaining, which we hope you will appreciate as part of its handcrafted character.

It bears the characters “心” (Kokoro) and “正吉” (Masayoshi), along with the Masayoshi logo. This Mukimono knife is ideal for creating refined garnishes and decorative cuts for kaiseki-style plating or for finishing sushi and sashimi platters with elegant vegetable accents.

The mirror finish and buffalo horn handle give it a sophisticated presence on the cutting board, appealing to both professional chefs and serious home cooks.
