Racking is kept to a strict minimum, the lees found at the bottom of the barrels continue to nourish the wine during the ageing process. No de-stemming, no added yeast or sulphur. Aged 24 months in foudres and barrels. Fining with fresh egg white. No filtration before bottling. For several years, rainfall has been non-existent in the summer. However, in 2021 they had 20 mm in July and 25 mm in August, small but beneficial rains for the vineyard. 2022 was a very dry year with only 115 mm between January and the end of August.

Of the 2021 ‘From a marginally cooler, damper year, the Syrah and Cabernet are already beginning to meld together. Tightly youthful and closed, this needs either advance decanting or be allowed to age for a few years. Fresh, vibrant notes of blue flowers and dark berry fruit on the nose opens out to concentrated, ripe blackberries, the vibrant kick of sloes and powerful, bitter black chocolate tannins, finishing with aromatic notes of black pepper and sweet allspice..
